White Chocolate and Macadamia Nut Cookies
My kids just love these cookies so I had to try to make them. Let me tell you that they truly enjoyed the homemade cookies. The best part for them was helping make them and gobbling them all up. I made 2 batches to give away but none where left! That's how good they were.
Ingredients:
1 cup butter, softened
1 ½ cups sugar
2 eggs
2 tsp. vanilla extract
2 ½ cups all-purpose flour
1 tsp. baking soda
½ tsp. salt
1 cup white chocolate
1 cup chopped macadamia nuts

Directions:
Preheat oven to 375°.
In a medium bowl, cream together the butter and sugar. Stir in the egg and vanilla. In a separate bowl combine the flour, baking soda and salt. Stir into the creamed mixture. Finally, stir in the white chocolate chips and macadamia nuts. Drop cookies by heaping teaspoonfuls onto an ungreased cookie sheet, about 2” apart and flatten the tops.
Bake for 8-10 minutes until lightly browned.  Let cool and enjoy!

Strawberry Waffles
Proud to say we got our new waffle maker. We did not spend a fortune on it. Actually one of the cheapest we found on the market. It can make up to 4 square waffles, perfect for our big family. Everyone from Daddy to the kids just loved them. I don't get how one can spend over a 100$ on a waffle maker. I think it's the batter that makes the difference.  This is coming from a waffle lover who loves her waffles crispy on the outside and fluffy on the inside, with loads of toppings on top!
Ingredients:
2 eggs
2 cups flour
4 teaspoons baking powder
1¾ cups milk
½ cup canola oil
2 tablespoons sugar
¼ teaspoon salt
½ teaspoon pure vanilla extract
Cooking spray

Maple syrup
Sliced strawberries
French vanilla ice cream
Bottle real whipping cream

Directions:
Preheat waffle baker. In a large bowl beat eggs until fluffy. The egg mixture should double in size. Combine the rest of the ingredients into the egg mixture and whisk until smooth. Spray waffle iron with cooking spray. Pour in batter onto hot waffle baker. Cook until golden brown. Repeat with reminder of batter. Serve with maple syrup, a scoop of vanilla ice cream, sliced strawberries and top it all off with whipping cream.

Easy Breezy Banana Cake
This is one of the easiest and tastiest recipes you'll ever find. I usually do these when my bananas are starting to go bad and no one ends up eating them. We don't like to waste in our house. What domestic goddess would anyway! This recipe turns out the best when the bananas are fully riped.
Ingredients:
4 ripe bananas
1 cup Sugar
2 eggs
½ cup canola oil or vegetable oil
2 cups flour
1 tablespoon baking powder
1 tablespoon baking soda
½ cup chopped walnuts (Optional)

Directions:
Preheat oven to 350 degrees.
In a bowl add the bananas and sugar. Mash well.  Mix in the eggs and oil. Then mix in the dry ingredients to the same bowl just until well combined. Stir in the walnuts if using. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool and enjoy!

Melt In Your Mouth Ribs
Now we're talking business. Melt in your mouth, fall off the bone, sweet goodness. I love me ribs and I finally got to make them myself and I have to say they turned out to be pretty good! We usually enjoy them with a side of mash potatoes or French fries. Don't forget your stack of napkins, it's a messy business. 
Ingredients:
1 tablespoon paprika
1 tablespoon garlic powder
2 tablespoons brown sugar
1 tablespoon salt
½ teaspoon cayenne pepper
½ teaspoon black pepper
2 racks pork ribs
Bull's Eye "Old Smoke Hickory" sauce or your favorite BBQ sauce

Directions:
Preheat oven to 300 degrees.
Mix all dry ingredients together in a small bowl to make your dry rub. Rub the mixture on both sides of each rib. Wrap and seal ribs in a single layer in tin foil. Place on a baking sheet and place in oven for 2 hours. You'll know when it’s done when the meat falls off the bone. Remove from oven. Increase the oven to 400 degrees. Unwrap the ribs, drain access liquid from the baking sheet. Brush both sides of the ribs with your favorite BBQ sauce. Place in oven to caramelize for about 25 minutes brushing once more with the BBQ sauce half way through cooking time. Once done take out of the oven and enjoy!

Ultimate Chili  Salad
Another Family favorite. This is so much fun because the kids get to assemble their own chili salad with their favorite fixing. The part they enjoy the most is that they get to eat it with nacho chips and not a fork! Truly a fun, yummy and healthy dish for your kids.
Ingredients:
1 tablespoon oil for cooking
1 diced onion
2 cloves finely chopped garlic 
500g ground turkey
1 pack chili mix
1 can tomato sauce
1 can diced tomatoes
1 can red kidney beans, drained and rinsed
2 ripe avocados
1 tablespoon lemon
1 tablespoon olive oil
Salt to taste

½ head romaine lettuce, shredded 
2 diced tomatoes, chopped
2 cups shredded cheese (I use marble cheese, you can also use monterey jack or mozzarella )
Sour cream 
Salsa
1 bag nacho chips

Directions:
In a large skillet over medium/high heat fry onions and garlic in oil. Once translucent add the ground turkey. Cook until meat is well browned stirring occasionally. Add the chili mix and both cans of tomato sauce and diced tomatoes to the meat mixture. Cover and let simmer on medium heat for about 15 minutes, stirring occasionally. Add the red kidney beans and turn off the heat once kidney beans are warmed all the way through about 2 minutes.
To make avocado mixture: place the peeled and pitted avocados in a bowl with the lemon, olive oil and salt to taste. Mash the avocado mixture with a fork to desired consistency.
To assemble have the toppings in separate bowls so everyone can add there own toppings to their salad. Kids love this part! Place a handful of lettuce in a bowl, some diced fresh tomatoes and cheese on top. Poor a ladle of the warm chili over top. Top up with  sour cream, salsa and avocado mixture. Enjoy by scooping the chili salad with some delicious nacho chips!

Breaded Cauliflower
Another super easy recipe with loads of  flavor! If your kids are not big fans of vegetables they will surely goggle these up. My kids just love them. They dip them in ketchup but I can imagine them being dipped in a nice warm cheese dip too.
Ingredients:
1 large head cauliflower
2 cups Italian bread crumbs
2 beaten eggs
Oil for frying (I use canola oil)

Directions:
Cut and wash cauliflower in small size florets. Boil in water for 5 to 8 minutes or until tender. Remove from heat, drain and cool. Heat about an inch of oil in a frying pan. Place Italian bread crumbs in a bowl. Whisk the eggs in a second bowl. Place each cauliflower floret in the egg mixture then in the bread crumb mixture and fry until will browned and crispy on all sides. Turn them a few times while frying.  Drain on paper towel and enjoy! 
  Chicken Mushroom Pepper Sub
Who doesn't love subs. We make a nice variation at our house. But this one is melt in your mouth goodness. I grew up on this. My parents would let us choose what we wanted on Friday nights. Surprisingly we always chose something with melted cheese from pizza to these tasty subs. Now it's a tradition I carry with my husband and kids.
Ingredients:
4 boneless skinless chicken breast
Salt and pepper for seasoning 
1 onion
1 whole green pepper 
1 pack mushroom
500g Mozzarella cheese, shredded
6 Sub rolls

Mayonnaise
1 head lettuce, shredded
2 tomatoes, diced
Dill pickles, cut into strips

Directions:
Cut chicken breasts into thin strips.Season with salt and pepper to taste. In a large skillet fry chicken strips in oil until browned and cooked all the way through. Set aside. In same skillet fry onions and green pepper for 2 minutes. Add the mushrooms. Cook until mushrooms are golden and rest of the vegetables are softened. Turn off the stove top. Return the chicken to the skillet and mix with fried vegetables. Set your broiler on low. Place chicken mixture onto your sub rolls and add a good amount of cheese over top. Place in oven until cheese melts. Add mayonnaise, lettuce, tomato and pickles on the warm sub. Enjoy!

Salmon Burger
  
A delicious and healthy treat for the whole family. These salmon burgers are so good tasting and so good for you. We hear about all the health benefits of garlic, onion, red pepper, cabbage and of course fish. They are all packed up in this yummy burger. We served them with oven baked fries for a low calorie meal.
Ingredients:
2 pounds cooked salmon, at room temperature 
1 tablespoon fresh lemon juice
1 small red onion, finely diced
2 cloves garlic minced
½ cup red pepper, finely diced
¼ fresh parsley finely chopped
1 tablespoon mayo 
1 egg, lightly beaten
2 cups panko bread crumbs (half for breading)
Salt and pepper to taste

1 coleslaw bag about 450g
1 cup mayo
1 teaspoon mustard
Salt and pepper to taste
Burger buns

Directions:
In a medium bowl mix salmon, lemon juice, onion, garlic, red pepper, parsley, mayo, 1 cup panko bread crumbs, egg and salt and pepper. Heat your pan, coat with cooking oil. Form your patties coating them with the remaining panko bread crumbs and place in hot pan. Fry 4 at a time until golden brown on both sides and crispy on the outside. Meanwhile, combine your coleslaw mixture, mayo, mustard and salt and pepper to taste. Place your cooked patties on a toasted burger bun add the coleslaw mixture, cover with tops of bun and enjoy!
